Step up to the plate: Pujol Mexico City



Founded by chef Enrique Olvera, Pujol brings a fresh twist to Mexican cuisine. Like many top-tier restaurants today, it champions sustainable practices, supporting local farms and focusing on soil health and resource efficiency.

The menu’s shaped by what’s available from the 15 farmers Pujol collaborates with, adhering to the principle of ‘never waste’. The restaurant’s mission is to elevate Mexican cuisine into an art form, with every team member playing a crucial role in creating an exceptional dining experience that not only honours but reinvents Mexico’s culinary legacy.

On the tasting menu, the taco is the only constant. The ever- changing dishes feature delights like blood orange aguachile, tuna taco, shiso with campechana sauce, or a lobster taco topped with salsa macha, macadamia nuts and fresh cheese.

For dessert, there’s cactus sorbet, or pickled figs with fig leaf ice cream, to round off the meal. And for drinks, choose from mezcals, wines, beers and cocktails. Whether you’re a seasoned foodie or a curious traveller, Pujol promises a journey through Mexico’s flavours like no other.
