The menu’s shaped by what’s available from the 15 farmers Pujol collaborates with, adhering to the principle of ‘never waste’. On the tasting menu, the taco is the only constant. The ever- changing dishes feature delights like blood orange aguachile, tuna taco, shiso with campechana sauce, or a lobster taco topped with salsa macha, macadamia nuts and fresh cheese.
