IT’S Boxing Day and you are probably still stuffed from Christmas dinner.

But it is easy to be tempted by a feast of delicious leftover grub. So loosen your belts and get ready for round two . . .

MELT IN THE MOUTH: Turn your usual festive leftover sarnie into a turkey melt.

It is a great way to use up the rest of the loaf if you made your own bread sauce.

Take two slices of bread and toast lightly, add turkey meat and grate Cathedral City cheddar, now £3 at Morrisons, over the top. Grill until melted.

For a treat, try adding leftover cranberry sauce to the filling.

SAY CHEESE: Turkey mac ’n’ cheese is a simple budget family dinner.
Pick up a pack of macaroni for 75p, four pints of milk for £1.45 and a £3 block of cheddar cheese, all from Asda.

Pour just over half the milk into a saucepan and bring to a simmer, add the pasta and cook for ten minutes. Take it off the heat and add in the grated cheddar and any leftover turkey.

SOUP-ERB SNACK: Strip the turkey carcass of all cooked meat and add the bones to a large pan.

Chuck in your leftover potato and carrot peel and some dried herbs.

Cover the bones with cold water and bring to the boil.

Use a large spoon to skim off any foamy residue, then turn the heat down and simmer for three hours.

The stock will make a tasty base for soups or gravy and, once cooled, you can chill or freeze it.

THE PIE’S THE LIMIT: Use up all your leftovers in one amazing pot pie.

Preheat the oven before adding spare veg to a saucepan on a low heat.

Pour over your homemade turkey stock, or chicken stock at 65p per pack, then add a cup of 99p cream, both from Aldi.

Simmer until it thickens, then mix in leftover turkey meat, gammon, cranberries or whatever you have. Season and transfer to an ovenproof dish before adding a puff pastry lid, 99p, also at Aldi.

Cook for 30 minutes and serve.
